Food - Local Sourcing
We focus on buying local produce from our state of New South Wales, so ingredients are fresher and food miles are kept low. Our seafood is selected from sustainable sources like Clean Harvest and our wine list is exclusively Australian (except for French Champagne). Our chefs and kitchen teams pride themselves on a paddock-to-plate, nose-to-tail, root-to-tip cuisine that maximises flavour while minimising organic waste. We are always happy to customise menus to suit the special dietary requirements of our guests.
